Bell peppers, courgettes, chestnut mushrooms, baby plum tomatoes baked in filo pastry with rosemary and thyme, chimichurri salsa

Baked wellington with homemade seitan, portobello mushrooms, squash, spinach, cashew and pecan nuts, rosemary roast potatoes, onion gravy
